Delicate squid pulp is a real delicacy, and in combination with the taste of sour cream, it is a real delight for a gourmet. How to cook squid in sour cream sauce so that it is tender and melts in your mouth?
It is necessary
- Squid - 3-4 frozen or freshly chilled carcasses
- Sour cream -2-3 tablespoons, it is better to choose fat content from 25%
- Butter - 2 tablespoons
- Wheat flour - 1 tablespoon
- Fine salt, ground black pepper - to taste
- Parsley and dill to taste.
- Water, boiling water - 1 liter

Step 1
Finely chop the greens, pour into a container and set aside. It is better to chop the greens right away because the squids cook quickly and there will be no time. If you overexpose the squid in boiling water or on the stove in a frying pan, the shellfish pulp will become "rubbery", tough and not so tasty.
Step 2
Defrost squid. Better - naturally, at room temperature. You can put squid in cold water, they will defrost faster, but in no case put frozen carcasses in hot water.
Step 3
We clean the defrosted squid from the inside and immerse it in salted boiling water (for about 2 minutes). As soon as the thin skin curls up and the flesh turns white, take it out immediately. Cool it under running cold water or just let it cool down at room temperature. Peel the skin with a knife and cut into thin strips or rings.
Step 4
Preheat the pan, add the butter and pour the chopped squid into the boiling oil. We constantly turn over, stir, so as not to burn. Fry for about 2 minutes, then sprinkle with flour and fry for another 20 seconds.
Step 5
Add sour cream, stir, top up with boiling water (not a lot, but so that it almost covers the squid). Simmer on low heat for 1 minute under the lid, salt, pepper, sprinkle with finely chopped dill and parsley, cover and turn off the gas. The squids are ready.
Step 6
Before serving, the dish can be sprinkled with finely chopped herbs and finely grated hard cheese. This will add extra tenderness and piquancy to the dish.
Step 7
This dish goes well with potatoes (mashed potatoes or fries), lentils, beans, buckwheat porridge. Vegetables (vegetable stew or salad), seaweed, mushrooms can also be an excellent side dish. Squids in sour cream sauce are wonderful even without garnish, both hot and cold.
