An unusual dish of squid stewed with mushrooms in sour cream sauce fully meets these requirements.

Rich in proteins and other nutrients, this dish is also very appetizing - especially when served in a festive way. It does not take much time to cook here, and the recipe itself does not present any particular difficulties in mastering. Even a not very experienced cook can give in to it.

When buying frozen squid, you should try to separate one carcass from another. If this fails, it means that the conditions of transportation of the product were violated, and it is not worth purchasing it.

Nevertheless, since you have to deal with such a capricious product as squid, it is important not to forget about some of the nuances of preparing such a dish. Many experienced housewives know that these seafood must be heat treated for either less than 3-4 minutes, or more than half an hour, otherwise they will come out extremely tough, and the impression of the food will be hopelessly ruined.

However, when squids languish in sour cream, this three to four minute interval is not entirely relevant. It is allowed to stew them a little longer, since then they will be well saturated with the sauce and still remain soft without losing their appetizing appearance.

It is best to take frozen squids for this dish, which are recommended not to be thawed, but simply rinsed with boiling water before processing. If unpeeled seafood was purchased, then it must be removed from the outer and inner films, leaving only the snow-white fillet. Now you need to cut the squid into beautiful rings and wait until they can be added to the dish.

Of the mushrooms, oyster mushrooms or champignons are most suitable here - and the latter are preferable. Then the food will come out nourishing and dietary at the same time. In addition, squid is excellently combined with just two of the above types of mushrooms.

A pound of seafood is required. The same amount of mushrooms is needed. They must be thoroughly rinsed, peeled (first of all - from the skin on the cap, if it is champignons) and chopped arbitrarily. Small mushrooms will look better when cut into not very thin slices.

In addition, the medium onion should be peeled and chopped. It should be fried in olive oil until slightly golden brown. After that, you need to put the chopped mushrooms in the same place and simmer everything together for about 10 minutes.

Those who are on a diet can use yogurt instead of sour cream in this dish. Of course, it should be simple, without any flavorings.

Now it's the squid's turn. They need to be poured into the pan to the rest of the products and pour all 200 grams of sour cream. The latter is pre-mixed with a tablespoon of flour, so that it does not curl up when heated. A little salt and pepper are also added there.

To make the squid with mushrooms dish tastier, it is better to stew these products not in industrially produced sour cream, but in one that is made at home. Simmer all these ingredients for no more than 10 minutes and certainly under a lid.

Squids will turn out to be excellent when they are well saturated with sour cream sauce. Meanwhile, the dish must be served while it is still hot, so it is better to cook it shortly before serving. It often goes as an independent dish, but many use it as a filling for pasta, laying on top of it.

As a festive version of such a dish, you can make a kind of julienne. In this case, there will be several nuances of cooking. So, squids are fried separately from mushrooms and onions and very quickly - literally in a minute or two. Then all these ingredients are mixed, laid out in portioned pots, poured with sour cream sauce, and sprinkled with grated hard cheese (like Parmesan) on top. The dish is baked for no more than 10 minutes and is decorated with chopped herbs when serving.
