Not everyone loves broccoli, but most likely this is only because they do not know how to cook this vegetable. There are many ways and recipes for preparing this type of cabbage. It can be boiled, stewed, fried, steamed, baked, and eaten raw. A quick and not particularly laborious way to cook delicious broccoli is a pie, or a quiche with Adyghe cheese and herbs.

- Dough:
- - flour - 250-300 g;
- - margarine - 120 g;
- - sour cream - 3 tablespoons;
- - baking powder - 1 tsp;
- - salt - a pinch.
- Filling:
- - broccoli - 250 g;
- - Adyghe cheese or paneer - 200 g;
- - salt and spices - asafoetida, nutmeg, shambhala, ginger, turmeric, black pepper, etc. - according to your preferences;
- - vegetable oil or ghee - for frying.
- Sauce:
- - sour cream - 200 g;
- - parsley, dill (optional);
- - flour or starch - 1 tablespoon;
- - salt and spices - asafoetida, cumin, cardamom, black pepper, etc. - to taste;
- - hard cheese - 50-100 g (for sprinkling).
Instructions
Step 1
Dough. Soften margarine to room temperature. Mash with a fork or blender. Add sour cream and baking powder. Salt. Gradually adding flour, knead into a soft dough. Grease a baking dish with butter and sprinkle with semolina so that our quiche does not stick. Put the mass in a mold and distribute it evenly with your hands, making small sides. Make a few pricks with a fork and put the future pie in an oven preheated to 180 degrees for about 10-15 minutes.
Step 2
Filling. Heat oil in a skillet and add spices. Cut the paneer into cubes, place in a skillet and fry on all sides. Divide the cabbage into small flowers and add to the cheese. Pour in a little water (2-3 tablespoons), cover and simmer over low heat for 10-15 minutes. Stir occasionally. Season with salt.
Step 3
Sauce. Mix all ingredients. Add a little water if necessary. The mass should not be very thick.
Step 4
Put the cooled filling on the cooled cake. Fill with sauce. Grate hard cheese and sprinkle on top. We send our cake pan into an oven preheated to 180 degrees for about 10 minutes. When the cheese is well melted, the quiche is ready. It can be served both hot and cold.
