Eggs of the smallest European bird, quail, tiny in size with a beautiful "marble" shell. The ratio of yolk to white in them is twice that of any other eggs. Each quail egg contains, in addition to 14 calories, vitamins A, B1 and B2, iron and potassium. Although scientists haven’t established for certain whether quail eggs have any particular benefit, many people claim that they flush out toxins, strengthen the immune system, and eliminate kidney stones.

Step 3
Take two dozen quail eggs, put them in a deep saucepan, cover with water and bring it to a boil. Cook for five minutes, then remove from heat, drain off the boiling water and immediately pour cold water over the eggs.
Step 4
Remove the shells from the eggs and carefully place them in the jar. Cut the onion into thin slices and the garlic into small pieces. Place the chopped vegetables on top of the eggs.
Step 5
Pour vinegar into a saucepan, add spices and bring to a boil. Pour eggs over. Allow the contents of the jar to cool completely, close the lid and refrigerate for 72 hours. Eggs marinated in this way can be stored for up to two weeks.
Step 6
A popular Chinese dish is smoked quail eggs. Boil and chill chicken eggs. Free them from the shell.
Step 7
Boil chicken broth, add anise, soy sauce, sugar, wait until sugar dissolves, remove from heat and let cool liquid. Submerge your eggs in it. Leave for an hour. After an hour, remove the eggs from the liquid, pat dry and rub each egg with sesame oil.
Step 8
Line a wok with cling foil, tea leaves and brown sugar on top. Put the wok on the fire and wait until the tea leaves start to smoke. Place the eggs on a wire rack and set aside for 15 minutes. Serve immediately.
