Lentil salad with croutons

Rinse one tablespoon of lentils and soak in cold water for 5 hours. Drain the water, pour the lentils with clean boiled water and cook over low heat. Finely chop the peeled onion and fry in vegetable oil. When the lentils are cooked, drain the water, add fried onions and a bag of fine rye croutons. Salt and mix everything with 2 tablespoons of mayonnaise.

Lentil cutlets

Mix the cooked lentils with the crumb of wheat bread soaked in milk. Pass through a meat grinder. Add a raw egg, fried onions, pepper, salt, spices, a little flour to the lentil mince. Mix everything thoroughly. Pour breadcrumbs into a plate. Form a cutlet from the minced lentil and roll in breadcrumbs. Heat a frying pan and fry lentil cutlets in butter + vegetable oil.

Lentil soup

Add water to the lentils and leave overnight. Put the soaked lentils in a saucepan and add water. For 125 grams of lentils, you need 750 ml of water. Cook lentils over low heat, covered for 20-30 minutes. Then add chopped potatoes and finely chopped carrots and onions to the saucepan. Vegetables and / or sausage pieces can be added if desired. Mix everything. And cook for another 10-15 minutes. Serve lentil soup with green onions and Borodino bread.

Lentil puree with potatoes

We make mashed potatoes separately. To do this, boil peeled potato tubers in water until tender. Add warm milk and butter. Now let's start making lentil puree. Cook lentils over low heat. Add salt. Then drain the water and pass the lentils through a meat grinder. Fry finely chopped onions in vegetable oil and add to mashed potatoes. Add a few tablespoons of lentil puree to the mashed potatoes (to taste).
