Praline is a popular confectionery ingredient that consists of finely chopped nuts in caramel. To prepare praline, you need 300 g of nuts without shell - almonds or hazelnuts are best. Nuts are peeled from a thin film and fried in butter.

While the nuts are cooling, caramel is prepared: 300 g of granulated sugar are poured with 8 glasses of water and the mixture is heated until the sugar is completely dissolved. It is advisable to do without stirring so that the caramel is smooth, even and transparent.

A spacious form is greased with vegetable oil, nuts are poured into it, poured with hot caramel and left until the mass has completely solidified.

After that, the nut-caramel plate is broken into several parts and crushed using a food processor to a state of fine praline crumbs.

500 g of dark chocolate is melted in a water bath, and then mixed with 300 g of heavy cream (fat content not less than 30%). Praline is added to the resulting mixture and thoroughly mixed until smooth.

If the preparation of sweets is designed only for treating adults, then a little rum, liqueur or brandy can be added to the mass.

The finished mass is wrapped in polyethylene or laid out on a glass plate and put into the refrigerator for solidification for about an hour.

The well-solidified mass allows you to easily separate small fragments and sculpt candies of the desired shape.

From the frozen chocolate mass, small balls are sculpted with an elongated crown, like in classic truffles. The finished balls are put into the freezer for 15-20 minutes, after which they are thoroughly rolled in cocoa powder and laid out in pre-prepared boxes.

The remaining chocolate mass is formed into balls and rolled in waffle crumbs or poured over with melted white and dark chocolate.

During the formation of sweets, you can put halves of nuts, dried fruits or berries inside, depending on the preferences of the household.
