Please note that in large stores the product can be stored longer than the prescribed period, meat can be passed off as fresh. The same can be observed in the market, where, however, you can inspect, smell and taste the product.

When buying meat, first evaluate the appearance of the meat: color, absence of films, crusts, various stains, which may indicate that the meat has been lying in the open air for a long time. The color of the meat should be pink. Veal is slightly darker than pork. The fat on the meat of any animal is white, not yellow, and is distributed over the entire surface. Stains and mucus on the meat will always tell you about its staleness. In addition, always look for a stamp on meat that indicates that it has passed the veterinary and sanitary control.

Be sure to touch the meat and examine it from all sides, while pressing on the meat pulp: if the meat is fresh, then the touch mark will disappear immediately, otherwise the meat is expired.

Also, one of the important indicators of meat freshness is its smell. Often, unscrupulous sellers use dyes or vinegar to mask the stale smell of meat. Focus on your sense of smell. If you don't like the smell at all, take a napkin and touch it to the surface of the meat: if you use dyes or other additives, the napkin will turn red.

Ask the seller to cut a piece of meat for you to sample. Fresh meat should be dry; when cutting such meat, clear juice is released.

Pay attention also to the store itself, the counter and the appearance of the seller. The room must be equipped with freezers, each seller must have a sanitary book with permission to work with food. The seller's clothing should be light, clean, the head is covered with a special cap, and the nails should be neat. When a professional seller picks up meat, he must wear transparent gloves.

Keep in mind that it is dangerous to buy frozen meat, because it is not known at what stage of freezing it is. Therefore, when buying frozen meat, ask the seller for a document certifying the suitability of the product.

It should be said separately about the purchase of meat for minced meat, barbecue and first courses. Buy meat for borscht and cabbage soup only on the bone, choose fillet for roast. Pork interlayer is ideal for steak cooking. And the most delicious kebab is obtained only from lamb. For minced meat, purchase meat from different varieties, including those in terms of fat content, for example, beef, chicken and pork.
