Stuffed pike perch is a difficult to prepare, but very tasty dish. It can be served on the table for any occasion, and pike perch will become the main dish of a gala dinner. This dish is also useful, because zander contains nutrients, vitamins, fatty acids, trace elements necessary for the proper functioning of the body.

- 1 pike perch carcass;
- 1 tablespoon semolina
- 100 ml cream;
- 10 pieces of black peppercorns;
- 1 teaspoon dill greens;
- 0.5 teaspoon sugar;

- 1 carrot;
- 1 onion;
- 5 pieces of allspice;
- 2 bay leaves;
- 1 tablespoon sugar
- water.
Instructions
Step 1
Wash the pike perch, peel it off the scales.
Step 2
Use a sharp knife to make circular cuts around the head and fins so that the head is not completely cut off.
Step 3
Pull the skin off the fish all the way to the tail. Cut the ridge at the base of the tail. Separate the skin and tail from the carcass. You should have a fish skin "stocking" with a head on one side and a tail on the other. Rinse your skin with cold running water.
Step 4
Wash the skin-free pike-perch carcass, remove the entrails from it. Remove the backbone and all the bones from the fish.
Step 5
Pass the fish fillets through a meat grinder.
Step 6
Add 1 tablespoon of semolina, 1 teaspoon of dill to the resulting minced fish. If desired, you can add savory, marjoram or oregano to the minced meat and dry greens.

Crush 5 black peppercorns and add to the minced meat.

Dissolve 0.5 teaspoon of granulated sugar in 100 ml of cream and add this mixture to the minced fish.

Add minced meat and mix everything well.

Stuff the skin you removed from the fish with cooked minced meat.

Peel 1 carrot and 1 onion. Wash them, cut into large pieces and place in a saucepan.

Pour boiling water over vegetables. Place 5 black peppercorns, 5 allspice peas, 2 bay leaves, 1 tablespoon granulated sugar in a saucepan.

Bring contents of a saucepan to a boil, reduce heat, season with broth to taste.

Simmer the vegetable broth for 15 minutes.

Gently place the stuffed pike perch in the boiling vegetable broth and simmer until tender.

Put the prepared stuffed pike perch on a dish, garnish with vegetables and serve.
