It is necessary

  • - Pork lard - 100 g (salted or fresh);
  • - Small onions - 2 pcs.;
  • - Chicken egg - 1 pc.;
  • - Ground black pepper;
  • - Salt;
  • - Sour cream or mayonnaise - 2 tbsp. l.;
  • - Lemon - 1 pc.;
  • - Vegetable oil for lubrication;
  • - Baking dish.

Instructions

Step 1

To begin with, defrost the frozen carcass with a pike, cut off the head and tail, peel off scales and entrails, and then rinse under running water. Pry the skin with a knife and slowly remove it from the carcass in a single layer with your hands. The main task is to leave the skin intact, especially carefully removing it from the fins. As a last resort, it is permissible to leave pieces of pulp on it, which can then be cut out.

Step 2

Peel the fish fillet. Remove any remaining meat from the skin and rotate it through the meat grinder twice. Peel the onions and also pass them through a meat grinder along with lard. In a separate bowl, combine the minced pike with chopped onion, lard and chicken egg. Add black pepper and salt to taste.

Step 3

Take the pike skin and gently spoon all the minced meat into it, without tamping. Hold the skin with one hand and apply with the other. After that, take a baking dish or baking sheet, grease it with any oil and lay the workpiece, giving it a curved shape. Tie one end with a thread, and near the other you can put a pike's head so that the pike looks whole.

Step 4

Turn on the oven and set the temperature to 180 degrees. When it's warmed up, place the mold in it and bake the fish for 1 hour. Remove the finished product from the oven and leave for 5-10 minutes. After that, put the stuffed pike on a dish with your head, next to it, line it with fresh vegetables, put lemon slices on top and make a pattern of mayonnaise or sour cream.
