Lent is the longest fast of the year. For 6 weeks, fasting people refuse light food and limit themselves to food. But fasting does not mean eating only a limited list of dishes. To diversify your diet, you can make lean cutlets that non-fasting family members will also appreciate.
Potato cutlets stuffed with mushrooms
You will need:
- potatoes - 10 pcs;
- fresh mushrooms - 200 g;
- onions - 2 pcs;
- breadcrumbs;
- sunflower oil.
Peel the potatoes and boil until tender in salted water. Then drain the water and grind the mashed potatoes, let cool slightly. Cut the mushrooms into small random pieces, finely chop the onion and fry everything in sunflower oil for about 15 minutes.
We make cakes from the cooled mashed potatoes, put a tablespoon of mushroom and onion filling in the center of each and form cutlets. Roll each in breadcrumbs. Grease the baking dish with sunflower oil, put the zrazy on it and bake in the oven for half an hour. You can fry the patties in a pan.
Rice cutlets with pickled mushrooms
You will need:
- Krasnodar rice - 1 glass;
- carrots - 1 pc;
- onion - 1 piece;
- bread crumbs;
- salted or pickled mushrooms - 100 g;
- sunflower oil;
- greens to taste.
We wash the rice in running water, put it on the stove, add salt and cook until tender. While the cereals are boiling, peel the onions and carrots. finely chop the onion, rub the carrots on a fine grater, fry the vegetables in sunflower oil. Drain the liquid from the mushrooms and cut into small pieces. Drain the finished rice and let it cool to room temperature.
Add vegetables, mushrooms and finely chopped herbs (to taste) to a bowl of rice, if necessary, add salt and spices and mix everything until smooth. From the resulting mass we form small cutlets, roll them in flour or bread crumbs.
Heat the vegetable oil in a frying pan, carefully put the patties in it and fry on both sides until golden brown. Put the finished cutlets on a paper towel to remove excess oil. Serve with fresh or pickled vegetables.
