Determine if the honey is ripe. To find out, pour the honey into a small saucepan and heat it to 20 ° C. Dip a spoon in there, grab some honey. If it is wrapped around a spoon, it is ripe honey. Otherwise, there is excess water in it: such honey will not be stored for a long time.

Unscrupulous sellers can mix something into honey. This is also easy to check. Dilute a spoonful of purchased honey in the same amount of water. If, when a drop of iodine is added to this solution, it turns blue, the honey contains unnecessary flour or starch. In the same honey solution, you can drop vinegar essence: if it hisses, there is chalk in the honey. Another way to find out if there are impurities in honey is to dip a hot stainless wire into it: it must remain clean.
