Summer is the time for barbecues and picnics in nature. One of the favorite picnic snacks is burgers. But in order for the meat in them to be juicy, it must be properly prepared in advance. Home-cooked meat will be much tastier than store meat, and a picnic will be remembered for a long time.

Step 1
Cut the meat into slices across the grain and chop into cubes. Always be sure to cut across the grain. Better to use the tail of the beef tenderloin.

Also grind fat into small cubes. Only 3-4 slices of bacon are needed for 200 g of beef tenderloin. Transfer the bacon to a bowl with the meat, pepper and salt.
Step 3
Stir the minced meat with your hands so that the fat is evenly distributed throughout the mass. Beat the minced meat on the board for about a minute. It will become more lush and oxygenated.
Step 4
Brush a plate and serving ring with olive oil. Put the minced meat in it no higher than the middle of the ring. Press down on the meat until it becomes even. Cover with cling film and refrigerate for half an hour.
Step 5
Then remove the mold and grill. The principle of frying is like any steak: firstly, the pan must be hot, and secondly, you should never press on the meat. Fry for a couple of minutes on each side. If the degree of frying does not suit you, then you can bring the cutlet to readiness in the oven (5-7 minutes at a temperature of 180 ° degrees).
