To make a good yeast dough for pies, you need a good brew. It is not difficult to prepare it, but for this it is necessary to observe the proportions of the ingredients and be sure to add liquid of a certain temperature.

Step 1
Start a dough. To do this, in a container with a volume of at least 0.5 liters, mix 1 tablespoon of sugar and 1 teaspoon of dry yeast. Pour 50 ml of milk or water over sugar and yeast, the temperature of the liquid must be strictly from 30 to 40 degrees, otherwise the yeast will not work. If there is no thermometer in the house, the temperature can be determined by dipping a finger into the liquid. At a temperature of 30-40 degrees - water or milk is hot, but does not burn the skin.
Step 2
Leave the dough for 15-30 minutes and wait until its volume has increased by about 2-3 times. Gently stir the risen dough, pour it into a medium-sized container, a metal cup with high sides is best for this. Add 200 ml of warm milk or water, 1 teaspoon of salt and 50 ml of vegetable oil, or the same amount of melted butter (you can add other fats, for example: margarine, corn, olive oil). Mix all ingredients thoroughly.
Step 3
Gradually add flour to the resulting mass and knead it until it stops sticking to your hands. This will require about 2 cups of double-sifted flour. The resulting dough can be used immediately for frying pies, but it is better to let it stand for another 20-30 minutes. During this time, the dough will still rise and become more fluffy. Be sure to grease the dough on top with vegetable oil and cover the cup on top with a towel or a thin bag, this is necessary so that it does not dry out while it rises.
Step 4
Knead the dough well again just before frying. Then you need to transfer it from the cup to a lightly floured wooden board or kitchen table and divide it into parts. You need to fry the pies in a large amount of fat, in this case the dough will not burn, and the pies will turn out fluffy and bake well.
