Now cutlets are made not only from meat, but also from vegetables, cereals, fish, sweet from cottage cheese and many other options. Therefore, it is enough to have a little imagination and desire to diversify the daily menu for a cozy family lunch or dinner.

Turkey cutlets with zucchini in bread crumbs

  • turkey fillet or ready-made minced meat - 500 grams;
  • young zucchini - 1 - 2 small pieces;
  • egg - 1 piece;
  • onions - 1 head;
  • vegetable oil for frying;
  • bread crumbs - 100 grams;
  • salt, pepper, any greens or dried herbs to taste.

Step by step recipe:

  1. Rinse the turkey fillet well under running water, dry with a paper towel and cut into portions so that it is convenient to pass through a meat grinder.
  2. Peel the onions and cut them into several slices. Of course, onions for cutlets can be simply chopped finely or grated, but since the meat will still be processed in an electric mill, in order to save time and finely process the ingredients, it is also recommended to grind vegetables.
  3. Wash the zucchini, dry and cut into small slices.
  4. All of the above ingredients - onion, meat and zucchini mince.
  5. Beat the egg well with a pinch of salt and pour into the resulting minced meat, mixing everything thoroughly.
  6. Wash the dill / parsley, dry it, chop finely and add to the minced meat.
  7. Season with salt and pepper to taste and you can begin to form the desired cakes with pre-moistened hands so that the mass does not stick to your palms.
  8. Pour the breadcrumbs into a deep plate and roll each cake there on both sides. If bread crumbs are not at hand, then you can make them yourself: preheat the oven to 200 degrees, cut any available bread into squares, preferably wheat varieties, and send them to the oven for 5 - 7 minutes. Pour the dried bread into a bag and carefully roll it over it with a rolling pin on a cutting board so that the pieces turn into small crumbs. Fresh breading is ready.
  9. Heat a non-stick frying pan greased with vegetable oil, put the formed cutlets and fry on one side over high heat until golden brown, then turn them over, reduce the heat and bring to a ready state under a closed lid for 7 to 10 minutes.

  • minced pork - beef - 500 grams;
  • onions - 1 head;
  • garlic - 2 - 3 cloves;
  • white bread - 50 grams;
  • milk - 50 ml;
  • egg - 3 pieces;
  • bread crumbs - 100 grams;
  • salt, pepper - to taste.

Step by step recipe:

  1. Cut the bread into slices or pieces and pour over the milk to soak the flesh.
  2. Peel the onions and garlic, grate or chop in a blender, the garlic can be passed through a press, then added to the minced meat.
  3. Drive 1 egg into the resulting mass, salt and pepper to taste.
  4. Squeeze the softened bread and add to the minced meat.

Ingredients:

  • chicken fillet - 1 kg;
  • onion - 1 head;
  • egg - 1 piece;
  • garlic - 3 - 4 cloves;
  • bread crumbs or dried wheat flour - 100 grams;
  • salt and pepper to taste.

For the filling you will need:

  • chicken eggs - 2 pieces;
  • hard cheese - 150 grams;
  • butter - 70 grams;
  • dill, parsley, salt.

For breading:

  • milk - 20 ml;
  • eggs - 2 pieces;
  • wheat flour - 4 tablespoons;
  • bread crumbs - 100 grams.

Step by step recipe:

  1. First you need to prepare the filling. Boil the eggs hard-boiled and put them under cold water for a few minutes so that you can easily remove the shells. Peel the eggs and chop finely or coarsely grate.
  2. Grate hard cheese as well.
  3. Wash the greens, dry, chop finely and add to the cheese and egg mixture. Salt and pepper.
  4. Soften the butter in advance and mix with the rest of the filling.
  5. Form small oval shapes, put on a plate and send to the freezer.
  6. Finely chop the chicken fillet. You can, of course, skip the fillet through a meat grinder, but in the classic recipe for such cutlets, you need to chop the meat with a knife.
  7. Peel the onion and garlic and mince or grate.
  8. Add the egg, onion, garlic, salt and pepper to the meat and mix thoroughly. If the mass turns out to be thin, then you can add a little bread crumbs or toasted bread.
  9. Take 3 plates, in which pour the bread crumbs, flour and in the third, mix the eggs with milk and beat well.
  10. Form cakes from the minced meat, put the frozen filling on the center and wrap in an oval cutlet.
  11. Roll the semi-finished products first in flour, then in an egg-milk mixture and then in breadcrumbs.
  12. Heat a greased skillet, place the patties and fry on both sides over medium heat for 5 minutes on each side.
