Orthodox Christians call Easter a dish made from cottage cheese with the addition of sour cream, cream, eggs, butter, candied fruits and raisins. Traditionally, Easter is shaped like a truncated pyramid.

It is necessary

    • For Easter "Festive":
    • 1 kg 20% cottage cheese;
    • 200 g butter;
    • 5 eggs;
    • 200 g sugar;
    • a stick of vanilla or 1 teaspoon of vanilla sugar;
    • 400 ml cream (10-20%);
    • 100 g of nuts (any);
    • 100 g raisins;
    • 100 g of candied fruits.
    • For Tsarskoy Easter:
    • 800 g of cottage cheese;
    • 4 yolks;
    • 1, 5 cups heavy cream;
    • 150-200 g sugar;
    • 150-200 g butter;
    • ¼ teaspoon of salt;
    • vanillin;
    • 1 cup chopped candied fruit

Instructions

Step 1

"Festive" Easter Pass the cottage cheese through a meat grinder or rub it through a sieve.

Step 2

Cut the vanilla stick and remove the seeds from it.

Step 3

Beat eggs with sugar. Add cream and mix thoroughly. Place vanilla seeds or vanilla sugar in the egg mass.

Step 4

Put the mixture on medium heat, bring to a boil and cook, stirring continuously, until the mixture begins to thicken (this will happen about three minutes after boiling). Remove the pan from heat and cool slightly.

Step 5

Peel, grind, or finely chop the nuts. Chop up candied fruits if they are large. Mix cottage cheese, nuts, candied fruits and raisins, which must first be washed, steamed and dried. Add the egg mass to the curd and mix well.

Step 6

Cover the sachet box folded in two or three layers with gauze. Make sure the edges of the gauze hang down slightly. Place the curd mass in a pastry dish. If you don't have a special jar, you can use a new flower pot or colander instead. Fold up the edges of the gauze. Transfer the mold to a plate or bowl. This is done in order to drain excess moisture. Place a load on top (it can be a regular three-liter jar filled with water).

Step 7

Place the mold and weight in the refrigerator for at least twelve hours. Then unfold the edges of the cheesecloth, turn the mold over into the dish and remove the cheesecloth. Decorate the finished Easter to taste with candied fruits, nuts, raisins.

Step 8

"Tsar" Easter Rub the cottage cheese through a fine sieve or colander.

Step 9

Whip the cream with 100 g of sugar. Add the yolks, salt and the remaining sugar to the previously softened butter. Stir everything thoroughly and beat until fluffy.

Step 10

Put the butter mixture in the curd, add candied fruits and vanillin and mix everything well until smooth. Then gently stir in the whipped cream and sugar.

Step 11

Cover the special beekeeper mold with a damp cloth. Put the curd mass on it, cover with the edges of the fabric on top. Put the load and refrigerate for six hours. Remove the finished Easter from the mold and apply candied fruit patterns to the surface
