First of all, the shrimp must be thoroughly rinsed under running cold water. Further, a neat deep incision is made along its entire back, which allows you to remove the black strip - the intestine with waste.

To prevent the shrimp from curling inward, several transverse cuts should be made on its "belly". It is especially convenient to handle large tiger prawns in this way. Before immersion in the future batter, they must also be thoroughly rolled in flour. This must be done on both sides.

To make batter, ice is added to cold water, and then flour. The mass must be mixed very carefully, without using a mixer and blender. It is best to do this with wooden Chinese chopsticks, without beating the liquid. In consistency, it should be like pancake dough.
