Solyanka with meat, raw smoked sausage and potatoes is a very tasty and aromatic dish that is definitely suitable for a hearty dinner with your family.

Ingredients:

  • 4 potato tubers;
  • 500 g pork (neck);
  • 100 g of raw smoked sausage;
  • 20 g canned green olives;
  • 2 pickled cucumbers;
  • 1 medium carrot;
  • 1 onion;
  • 1 thin-skinned lemon;
  • 2 tbsp. l. tomato paste;
  • 3 laurel leaves;
  • 4-5 stalks of parsley;
  • 3 peppercorns (black);
  • salt.

Preparation:

  1. Pour water into a saucepan, bring to a boil, dip the pork pulp in boiling water whole. This will produce less foam.
  2. Add bay leaves, parsley stalks (whole, do not cut them) and black peppercorns to the boiling broth with pork.
  3. Let it simmer for a couple of minutes, reduce heat to medium, cover with a lid and leave to simmer for 1 hour.
  4. Peel vegetables: onion, potatoes and carrots. Chop the onion as small as possible. Grate the carrots on a coarse grater.
  5. Heat a frying pan, pour in vegetable oil, put chopped onions and fry for 10 minutes. Then add the grated carrots to the frying, mix the ingredients, cover and leave to sauté over low heat.
  6. At this time, cut the pickles into cubes and the olives into slices. Cut the raw smoked sausage into thin strips.
  7. Add chopped cucumbers, sausage, olives and tomato paste to the grill, stir with a spatula and simmer for about 15 minutes with the lid closed over medium heat.
  8. An hour has passed since the pork began to cook, now you need to fish it out of the broth and let it cool a little. Also remove all the ingredients with which it was cooked and discard them. Next, cut the meat into portions and put it back in the pan. If water has boiled away during cooking, then you need to top up, bring to a boil.
  9. Cut the potatoes into small slices or cubes, rinse in running water and dip in the broth, let simmer for 10 minutes. Next, add frying to the pan, cover and simmer over low heat for half an hour. Cut a small lemon into quarters and add to the hodgepodge 15 minutes until tender.
  10. After the soup is ready, let it sit for about 20 minutes.
