Rabbit meat is very tasty and somewhat resembles chicken. You can cook it almost as you like: boil, fry, stew, etc. Rabbit casserole is no less tasty. At the same time, the meat is crushed into minced meat and cooked in the oven. The dish turns out to be incredibly tender, but most importantly - delicious.

- - rabbit liver 100 g
- - milk 200 ml
- - lard 100 g
- - onion 1 pc.
- - potatoes 1 pc.
- - carrots 1 pc.
- - eggs 2 pcs.
- - white bread 70 g
- - boiled mushrooms 20 g
- - fat 20 g
- - mayonnaise 100 g
- - horseradish root 20-30 g
- - bay leaves 3 pcs.
- - black peppercorns 3 pcs.
- - salt and ground pepper
Instructions
Step 1
Wash the rabbit meat and cut into pieces.
Step 2
Peel the carrots and onions, wash well, cut into several large pieces and place in a saucepan. Place prepared rabbit meat and finely chopped parsley there. Pour everything into the fire, add a little salt, add peppercorns and bay leaf. Cook until all ingredients are cooked. 30 minutes before the end of cooking, add 50 g of bacon to the broth.
Step 3
Wash the liver, pour in milk and leave for 20 minutes to soften. Then put in a saucepan with meat and vegetables and cook for another 15 minutes.
Step 4
Separate the finished rabbit meat and liver, as well as vegetables from the broth and mince together with mushrooms, bread soaked in water or milk and boiled potatoes 2 or 3 times. Add eggs, salt and pepper to the resulting mixture and mix.
Step 5
Grease a deep baking dish and put the remaining bacon on the bottom, cutting it into strips. Put the minced meat on top and send it to the oven preheated to 200 degrees for half an hour.
Step 6
While the dish is baking, you need to prepare the sauce. Grate horseradish root on a fine grater and mix it with mayonnaise.
Step 7
Cut the prepared casserole into pieces, pour over the sauce and serve hot. For a side dish, potatoes or rice are suitable.
