Small, young zucchini are ideal for stuffing with boats. There are recipes for such a dish in many cuisines of the world. This food is especially loved in Mediterranean countries.
Italian style stuffed zucchini
Italian housewives are big fans of hearty, quick and aromatic dishes. This is how zucchini turn out if you stuff them the way they do in Italy. You will need:
- 3 young zucchini;
- 2 large tomatoes;
- 500 grams of lean ground beef;
- ¾ glasses of bread crumbs;
- ½ cup grated Parmesan;
- 1 glass of tomato sauce;
- 2 tablespoons of chopped parsley;
- 1 teaspoon fresh oregano leaves;
- salt and freshly ground black pepper.
Chopped onions, garlic, chopped basil leaves can be added to minced zucchini.
Wash the zucchini, dry and cut in half lengthwise. Remove the pulp. Put the boats in a baking dish, add a little water and place in the microwave for 4-5 minutes, turning the appliance on at maximum heat. Let the zucchini cool. Cut the tomatoes into cubes.
Fry the ground beef in a pan until light golden brown, drain off excess fat and cool. Combine the fried beef with bread crumbs, parmesan cheese, tomato sauce, tomatoes, and herbs. Season with salt and pepper. Stuff the zucchini. Preheat oven to 170C. Bake the dish for 30 minutes. Serve hot.
Greek-style zucchini
In Greece, they prefer to put minced lamb in such dishes and cook them lighter. You will need:
- 4 medium zucchini;
- 750 grams of minced lamb;
- 2 cloves of garlic;
- 100 grams of feta;
- 2 fleshy tomatoes;
- 2 raw chicken eggs;
- 1 teaspoon of thyme leaves;
- olive oil.
Serve Greek zucchini with plain thick yogurt.
Heat a tablespoon of olive oil in a deep frying pan. Fry the minced garlic until it smells characteristic. Add minced meat, stir-fry, drain off excess fat. Boil a large pot of water at the same time. Put the zucchini in the boiling water one at a time. Take them out after 4 minutes and cool them under running water. Cut each zucchini in half, remove the pulp and chop. Dip the tomatoes in boiling water, peel them and cut into cubes.
Add chopped squash pulp to the minced meat along with the tomatoes, add the chicken egg, season with salt and pepper. Mix well. Stuff the zucchini. Place them on a greased baking sheet, sprinkle with crumbled feta cheese and place in an oven preheated to 175 ° C. Bake for 20-30 minutes.
