Mannik is one of the easiest homemade pie options. When cooked correctly, it turns out to be fluffy and airy. Try modifying your usual recipe by adding lemon to the dough. Light sour taste and spicy aroma will give the baked goods an original flavor.
Lemon manna with raisins
Try making a simple yet mouth-watering pie with lemon zest and raisins. The recipe can be slightly changed by excluding flour from it and replacing sour cream with soft cottage cheese. The finished product can be cut in half horizontally and smeared with sour cream or jam - you get a cake. But even without additives, the manna will turn out delicious - you can simply sprinkle its surface with powdered sugar.
You will need:
- 1 glass of semolina;
- 1 glass of sour cream;
- 1 cup of sugar;
- 2 teaspoons of vanilla sugar;
- 1 glass of wheat flour;
- 1 teaspoon baking powder;
- 3 eggs;
- 1 lemon;
- 0.5 cups of light pitted raisins.
Instead of raisins, you can add finely chopped dried apricots to the dough.
Mix semolina with sour cream and let stand for several hours so that the cereal swells well. Then add eggs, granulated sugar, vanilla sugar and flour, previously sifted and mixed with baking powder, to the mass. Mix everything well with a spatula or beat with a mixer - the mass should be homogeneous.
Wash the lemon thoroughly with hot water, dry and rub the zest. Pour the raisins with boiling water, and then discard in a colander and let the water drain. Add the zest and raisins to the dough and stir again. Grease the mold with butter and pour the dough into it.
Place the baking dish in an oven at 220 ° C and bake the cake - it will take about 20 minutes to cook. Correctly kneaded dough should rise into a fluffy hat. Remove the manna from the oven, put it on a board and sprinkle the surface with powdered sugar. Serve when it has cooled completely.
Mannik with lemon and nuts
Delicate, puffy lemon-flavored dough can be complemented with other tasty additions - for example, chopped nuts.
You will need:
- 2 cups semolina;
- 130 g butter;
- 200 g of sugar;
- 250 ml of yogurt without additives;
- 3 eggs;
- 0.75 cups of shelled walnut kernels;
- 0.5 lemons;
- 1 tablespoon of powdered sugar;
- 0.5 cups boiling water.
Walnuts can be substituted for hazelnuts or almonds.
Toast the nuts lightly in a skillet, refrigerate and crush them in a mortar. Wash the lemon thoroughly, finely grate the zest. Separate the yolks from the whites. Mash the butter and sugar, add the yolks, yogurt, ground nuts, semolina and lemon zest, mix everything well.
Whisk the whites into a strong foam and add portions to the dough. Transfer the resulting mass into a mold greased with butter. Bake manna in an oven preheated to 200 ° C. While the pie is cooking, squeeze the lemon juice, mix it with boiling water and powdered sugar. Take out the manna, pour hot syrup over it and place it back in the oven for 2-3 minutes. Chill the product and serve sliced.
