- -2 cups fresh mushrooms - peeled and finely chopped
- -1 tbsp. olive oil
- 3-4 garlic cloves, chopped
- -1 tbsp. butter
- -½ tbsp. chopped fresh thyme
- -1 cup chicken or vegetable broth
- -1 tbsp. flour, dissolve in 1 tbsp. water
- -salt to taste
- 1/2 cup heavy cream
- 1/2 cup milk (skim is better)
- - nutmeg as spice
- - freshly ground black pepper to taste
- -Fresh parsley or thyme for garnish
- -Bay leaf
Instructions
Step 1
Heat olive oil in a saucepan. Add butter and lightly sauté the garlic over medium heat.
Step 2
Add mushrooms, thyme, and bay leaf. Fry over medium heat for 5 minutes.
Step 3
Add chicken stock. Stir until broth boils, then reduce heat and simmer for 10 minutes.
Step 4
Add the diluted flour and stir constantly until the mixture thickens. Season with salt and nutmeg. Add other seasonings to your liking.
Step 5
Add milk and cream, freshly ground black pepper. Bring to a boil.
Step 6
