Risotto is a dish native to Italy. There is no exact recipe. There are many types of this dish, but it is known that the main components are: rice (preferably fried) and broth.

This recipe is very simple and does not take much time, everything will take you no more than an hour and does not require deep knowledge of the culinary craft.

For four people you will need:

- 500 gr. rice;

- broth;

- 250 - 300 gr. chicken breast;

- dry mushrooms;

- garlic, one head;

- two onions;

- 200 gr. parmesan cheese;

- 250 gr. milk;

- olive oil;

- flour (optional);

- salt and spices to taste.

The first stage is perhaps the most important in this matter. This is the preparation of the broth. You can take almost anything as a basis: vegetables, meat, mushrooms. We use meat on chicken breast, and later we use the meat to make the sauce. You just need to boil the breast, no spices. Further, after the broth has been prepared, pour it into a saucepan with rice. Bring to a boil and put on a small fire, cover with a lid. While our rice is being cooked in broth, we move on to the second stage - the sauce.

Here we will make a creamy mushroom sauce. It will perfectly complement our risotto. To do this, finely chop the onion and garlic. Pour boiling water over dry mushrooms. Fry vegetables in olive oil in a skillet until golden brown. We begin to finely chop the mushrooms and chicken breast, which was used for the broth. Add all this to vegetables and fry for another 5 minutes. Add milk just enough to cover our vegetables with mushrooms and meat. Stir and put on medium heat. And we pass to the final stage.

Rice is ready, sauce too. Now add one to the other and mix. Salt and pepper. You can add anything from spices: turmeric for color, dried basil, bay leaves for flavor. If you like a thicker sauce, then you can add three tablespoons of flour - it won't get any worse. Grind the parmesan on a grater and add it to our dish. Mix everything and leave for about 5 minutes over low heat so that the spices exchange flavors.

The dish is ready and can be served. Since this is Italy, dry white wine is perfect for this dish.
