  • fresh tomatoes;
  • cabbage;
  • potatoes - 3 pcs;
  • beets - 1 pc;
  • vegetable broth or water - 2.5 liters;
  • greens and salt;
  • ground black pepper;
  • bay leaf - 1 pc;
  • garlic - 4 cloves;
  • olive or sunflower oil - 7 tablespoons;
  • tomato paste - 5 tablespoons;
  • bell pepper - 1-2 pcs;
  • parsley root - 1 pc;
  • onions - 2 pcs;
  • carrots - 1 pc.

Instructions

Step 1

Preparing lean delicious borscht will not work outright; first, prepare all the necessary ingredients. Chop the cabbage into thin strips, cut the bell pepper, peel the potatoes. Cut the onion into cubes.

Step 2

Grind parsley and carrots with beets separately using a coarse grater. Pour water into a saucepan and while it boils, begin to fry the vegetables.

Step 3

Let's try to cook the fried vegetables properly. Pour oil into a skillet, heat it and place onion. Set on medium heat and sauté until transparent. Then add the parsley root, carrots and simmer for 4 minutes.

Step 4

Add the tomato, bell peppers and tomatoes to the pan, mix the ingredients for the lean borscht well. Cook for 4 minutes on low heat.

Step 5

Add the beets, stir again. Pour half a glass of hot water into the pan and continue to simmer the frying on the delicious lean borscht, covering the vegetables with a lid, for 7 minutes.
