As for pork, you can also use beef, lamb, turkey thighs or chicken.

To prepare the dish you will need:

  • 700-800 grams of boneless meat;
  • three medium-sized onions;
  • three tablespoons of Extra Virgin olive oil;
  • three tablespoons of tomato paste;
  • a teaspoon of 9% vinegar;
  • half a teaspoon of sugar;
  • one small red bell pepper;
  • a teaspoon of soy sauce;
  • a small salted (not lightly salted!) cucumber;
  • salt;
  • black and / or allspice pepper;
  • seasoning "Mediterranean cuisine";
  • a quarter teaspoon of smoked paprika;
  • a few basil leaves, better than green

The Mediterranean cuisine seasoning can be replaced with Italian cuisine or Provencal herbs mixtures.

Preparation

Remove the stem and seeds from the red bell pepper. Dip in a bowl of boiling water for a few seconds and remove the skin. Cut into small pieces.

Peel and cut onions into small cubes. Sauté the onions and peppers in olive oil until tender.

Put tomato paste with onions and peppers, heat slightly, add a little water, stir. Don't make the marinade too thin, you can add water later if needed! Grate the pickled cucumber on a fine grater, put in the marinade and bring to a boil.

Add dry seasoning to the hot marinade, stir, remove from heat and let cool slightly (about 15-20 minutes).

Add soy sauce, salt, black pepper, vinegar, smoked paprika, finely chopped basil, crushed and chopped garlic, mix thoroughly and let it brew. If you like spicy dishes, then add a little hot red pepper additionally.

While the marinade is brewing, prepare the meat. Wash, dry, remove all excess (tendons, small bones, films, etc.), cut into small pieces (choose the shape of your choice). If you are using pork with fat, then cut in such a way that there is a little fat in each piece.

Pour the marinade over the meat, mix thoroughly, close tightly and refrigerate for several hours.

Preheat a frying pan, put the meat on it, cover and simmer over low heat for 40-50 minutes. During the stewing process, periodically add a little boiled water. As a result, you should get soft meat with enough gravy.

While the meat is cooking, prepare the side dish. This can be rice, bulgur, pasta, boiled potatoes or mashed potatoes. Additionally, serve fresh tomatoes, cucumbers, herbs.
