Cheesecake with ricotta and fresh strawberries cooks in one hour. It turns out a very original and aromatic dessert.
It is necessary
- For eight servings:
- - ricotta cheese - 500 g;
- - shortbread cookies - 200 g;
- - strawberries - 400 g;
- - butter - 80 g;
- - icing sugar - 50 g;
- - gelatin - 15 g;
- - vanilla essence - 1 tsp;
- - a bunch of fresh mint.
Instructions
Step 1
Grind shortbread cookies in a blender until crumbly. Melt butter, mix with cookies.
Step 2
Take a round shape, tamp the cookies along the bottom, put them in the refrigerator.
Step 3
You can prepare the filling for now. Pour two tablespoons of cold water into a bowl, add a bag of gelatin, put the bowl in a bowl of hot water. Just make sure that the gelatin does not overheat, otherwise lumps will appear.
Step 4
Mix Ricotta with powdered sugar and vanilla essence. Add gelatin, mix again.
Step 5
Pour the mixture over the cookies, put in the oven. Bake for 40 minutes at 160 degrees.
