The most common ingredients in dough are eggs, butter and dairy products. However, you can do without them by preparing delicious lean pastries. Try making cookies or a pie without eggs - the dough will turn out to be airy and light, and the filling or spices will give the main taste to the product.
Lenten charlotte
Try to cook apple charlotte - when baking you will not need not only an egg, but also dairy products. Charlotte turns out to be very rich in taste and is great for a lean table or diet food.
You will need:
- 3 large sweet and sour apples;
- icing sugar for sprinkling;
- bread crumbs;
- 1, 3 glasses of wheat flour;
- 0.5 teaspoon of salt;
- 0.75 glasses of freshly squeezed orange juice;
- 30 ml of freshly squeezed lemon juice;
- 0.3 cups odorless vegetable oil;
- 0.75 glasses of sugar;
- 1 teaspoon of baking soda.
For charlotte, aromatic apples of late varieties are best suited - for example, ranet or antonovka.
Wash, peel and core the apples. Cut the fruit into wedges. Grease a refractory mold with vegetable oil and sprinkle with bread crumbs. Place the apple slices in it and sprinkle them lightly with lemon juice.
Prepare the dough. In a deep bowl, combine orange and lemon juices, vegetable oil, salt and sugar. Beat the mixture until smooth, then add the sifted flour in portions. Grind the dough until completely homogeneous - for this it is convenient to use a submersible mixer.
Dissolve baking soda in two tablespoons of water, pour the mixture into the dough and beat it again. Pour the dough over the apples in the mold. Preheat oven to 180C. Place the charlotte in it and bake for 1 hour. Remove the finished product from the mold, chill on the board and sprinkle with powdered sugar.

You can prepare small crispy biscuits with spices and honey for tea. It bakes very quickly and keeps well.
You will need:
- 250 g pancake flour;

- 0.5 teaspoon of cinnamon powder;
- 1 teaspoon ground nutmeg;
- 125 g of liquid honey;
- 125 g butter;
- 60 g of sugar.
In a bowl, combine flour, baking soda, salt and spices. Add softened butter and chop everything into crumbs. Heat the honey a little and pour it into the mixture. Stir the dough thoroughly until smooth.
Dip your hands into flour, form the dough into small balls and place them on a greased baking sheet. Use the convex side of a spoon to flatten the balls into small cakes. Bake the cookies in an oven preheated to 190 ° C. When the tortillas are golden, remove the baking sheet, remove the cookies and refrigerate on a wire rack.
