To prepare this appetizer, you need to take small calamari (sepia), already peeled and ready to cook. This appetizer belongs to the Greek cuisine, it is distinguished by its original taste and pleasant aroma.

- - 1 red paprika;
- - 1 green or yellow paprika;
- - 1 lemon;
- - 3 cloves of garlic;
- - 3 green onion feathers;
- - 5 sprigs of basil;
- - 4 tbsp. tablespoons of olive oil;
- - black pepper, salt.
Instructions
Step 1
Rinse the squid with cold water and pat dry with paper towels. Cut off the heads, set aside. Cut the squid carcasses in half lengthwise, and cut each half in half again to make digestible pieces. Next, slightly cut the squid pieces with a sharp knife in a diamond shape so that they do not curl during cooking.
Step 2
Peel the paprika from the stem, seeds and partitions, rinse, blot and cut into thin strips along the entire length. Peel the cloves of garlic, cut into thin slices lengthwise. Rinse the green onions, shake off any moisture, cut off the tendril edge and cut into 5 cm long cubes. Remove the basil leaves from the sprig.
Step 3
Heat a frying pan, pour 2 tablespoons of olive oil into it, fry the squid pieces together with their heads for 5 minutes. Transfer the squid from the skillet to kitchen napkins.
Step 4
Heat the remaining 2 tablespoons of olive oil in a skillet, sauté the paprika, garlic and green onions, add the squid, basil leaves and mix together.
Step 5
Pour boiling water over the lemon, dry with napkins, cut half of the lemon into slices, and squeeze the juice from the second, and rub the zest. Season the pan with salt and pepper, add juice and lemon zest.
Step 6
Squid with paprika and basil are ready, serve this appetizer, garnished with lemon wedges. Can also be served chilled.
