Fermented cabbage according to all the rules is a tasty and healthy product. And what makes it such is not only strict adherence to the cooking recipe, but also the competent choice of the container in which the food is fermented.
It is known that wooden, enameled and glass containers are the most preferred for pickling cabbage, since they do not emit harmful substances in contact with acids. However, today, not every housewife has, for example, a wooden tub or an enamel pan of a suitable size, in which it would be convenient to prepare cabbage for the winter. In the absence of the necessary container, questions often arise regarding the use of containers made of certain materials for fermentation.
Is it possible to ferment cabbage in a plastic food bucket
Plastic buckets are household items that are found in every home. And it is them that many housewives use for pickling cabbage. Let's figure out whether it is safe to harvest pickles in them, whether the use of plastic containers affects the taste of the finished products.
So, sauerkraut absorbs various odors, and since buckets are made of plastic with all sorts of impurities, in most cases the finished product has an unpleasant aftertaste. And the acid formed during fermentation interacts with plastic in one way or another, therefore, harmful substances get into the workpieces. It is worth noting, however, that there are currently plastic buckets on the market specifically designed for cold foods. Yes, it is preferable to use them for storing bulk products: sugar, cereals, flour and others, but they are quite suitable for pickling cabbage, if you follow certain rules:
- you can only use containers for food (there is a special label on the buckets);
- for blanks, it is better to take buckets of colorless plastic (like a nylon lid);
- it is imperative to rinse a new bucket 2-3 times, then fill it up to the top with water and leave for a day;
- the bucket is best used just before the sourdough is complete. It is undesirable to store ready-made cabbage in a bucket; it should be transferred, for example, to glass jars, since they are in every home.
