Green coffee beans are best kept. They can last for over a year if kept in an opaque container. After such a long storage period, they fully retain their aromatic and taste qualities. The only downside to green coffee beans is that it takes a lot of time to make a cup of coffee. First you need to fry the beans, then grind, and only then boil. Therefore, green coffee can only be found in specialized stores, where real connoisseurs buy them.
Step 2
Roasted whole grains are the more accessible type of coffee for most people. It is much easier to make coffee out of them, since it is quite easy to grind the beans. The aroma of freshly ground coffee can wake anyone up. But, alas, this coffee has a significant drawback - it is not recommended to store it for more than two weeks, even if you do it in an airtight container that absolutely does not allow light to pass through. Glass or ceramic containers should be used to store roasted beans, as metal or plastic containers can affect the taste of the coffee.

Roasted grains give off carbon dioxide in large quantities. To give an outlet to the gas accumulating under the container lid, it is necessary to open the container with coffee for a short time once a day. You can use special valve bags that allow the carbon dioxide to escape but prevent oxygen from reaching the coffee. These packages, unfortunately, are quite expensive, and besides, they still have to be found on sale. If you want to store roasted coffee beans for a longer time, you need to freeze them. Such coffee can be stored in the freezer for a maximum of two months. After once defrosting, the grain should not be frozen again. Before grinding, by the way, you do not need to defrost them, because in a frozen state they grind much better. Never store beans in the refrigerator, as there is always a large amount of foreign odors, which coffee will perfectly absorb due to its increased hygroscopicity.

Ground coffee is especially difficult to store as its aroma and flavor disappear very quickly. Unpackaged ground coffee loses its taste after a few days, so it is advisable to use it as soon as possible. To store such coffee, you can use sealed ceramic or glass containers that do not allow light to pass through. If possible, you should minimize the contact of ground coffee with oxygen so as not to spoil the taste of the drink.
