Chicken stuffed with some kind of cereal is one of the most satisfying dishes. It combines both a side dish and a meat dish at once. One of the recipes for such a dish is chicken stuffed with buckwheat. When baked, the filling is soaked in chicken fat and becomes very tasty.
It is necessary
-
- chicken weighing 1.5 kg
- 150 g buckwheat
- 200 g chicken liver
- 2 onions
- 4-5 strips of bacon
- mayonnaise
- salt
- pepper
- chicken spices
- frying oil
Instructions
Step 1
Wash the chicken thoroughly and dry it. Then rub with salt, pepper and spices, put in a bag and put in the refrigerator on the lower shelf to marinate for six hours. Since the marinating process is very long, to cook dinner, marinate the chicken better in the morning.
Step 2
Take 150 g of buckwheat and carefully sort it out so that no debris and pebbles come across. Pour buckwheat into a colander and rinse well under running water. In a small saucepan, boil the cereals in salted water until half cooked.
Step 3
Wash 200 g of chicken liver and discard in a colander to drain the water. Peel two onions and cut into medium cubes. Pour some vegetable oil into the pan and fry the chopped onion and chicken liver in it, add a little salt. Fry, stirring constantly, under the lid for five minutes, but no more, until the liver is half cooked.
Step 4
Place the fried chicken liver on a cutting board and cut. Add chopped onion and chopped liver to buckwheat. Mix everything very thoroughly.
Step 5
Take the pickled chicken out of the refrigerator and stuff it with buckwheat, while tamping it tightly with your hand. Grease the stuffed carcass with mayonnaise on all sides. Since the chicken will take a long time to cook so that its delicate skin does not burn, it is recommended to cover it with strips of bacon.
Step 6
Preheat the oven to 180 degrees. Bake the chicken for forty minutes, after this time, remove the bacon and cook for about fifty minutes more, until crusty and golden brown. Cut the prepared stuffed chicken lengthwise, put the garnish on a plate, then cut the chicken in the usual way.
