Step 1

To bake a delicious Easter cake, you first need to make a dough. Warm the milk a little in a deep saucepan and dissolve the live yeast in it. Then add a pound of flour, mix well and put the cake dough in a warm place. After about half an hour, the dough will increase in volume by 2-3 times, which means that it is ready.

While the dough reaches, you need to prepare the rest of the ingredients for the Easter cake. Raisins must be carefully sorted out and get rid of debris and twigs. Then soak it in boiling water for about 15 minutes. Large candied fruits can be cut. Dry the soaked raisins with a towel and roll in flour.

Also, while the dough for the Easter cake is not ready, you need to separate the egg whites from the yolks. Whisk the whites with a little salt until they are fluffy. Grind the yolks white with plain and vanilla sugar.

When the dough is ready, you can proceed directly to the preparation of the cake. First of all, you need to add yolks pounded with sugar to the dough and mix everything. Then send soft butter and whites, whipped until foam, to the same place, mix well.

The next step in making Easter cake is one of the most important. It is necessary to sift flour into the dough in portions, stirring well after each portion. You also need to make sure that there is enough flour, and the dough does not stick too much to your hands. After pouring out all the flour, the dough must be kneaded well on the floured table surface. If necessary, you can add more flour to the dough.

The prepared cake dough should be placed in a deep saucepan, sprinkled with flour on top and put in a warm oven for about an hour (35-40 ° C). After that, mix candied fruits and raisins into the risen dough and put in the oven for another 15 minutes.

Remove the Easter cake dough from the oven and place on the table. Turn on the oven itself at 100 degrees. Prepare tins for cakes: grease the bottom with a little oil, and put a circle of oiled parchment on top.

Divide the dough into equal pieces according to the number of molds. Roll each in flour and roll into a ball. Place the pieces into the molds and cover with a clean towel for 15 minutes. It is important that the dough takes up about a third of the mold, no more. Then put the forms on a baking sheet and send to the oven.

At a temperature of 100 degrees, it takes 10 minutes to bake an Easter cake. Then the temperature should be increased to 190 degrees and baked for another 20-40 minutes (check the readiness with a toothpick). Ready-made Easter cakes should stand for 10 minutes on the table in molds. At this time, you can prepare icing for them. To do this, you need to grind the icing sugar with lemon juice, adding it little by little. The finished glaze should resemble condensed milk in consistency.

Gently remove the Easter cakes from the molds and cover with glaze. You can decorate the cake with candied fruits, chopped nuts and ready-made confectionery dressing.
