Kulich is the oldest symbol of the resurrection of Christ, so it must be present on the Easter table. Delicate, fragrant and soft cakes prepared according to these recipes do not stale for a very long time.
Kulich "Gentle"
To make Easter cake according to this recipe, you will need:
- 0.5 liters of milk;
- 1 kg of flour;
- 250 g margarine;
- 200 g of butter;
- 100 g of ghee;
- 150 g sour cream;
- 0.5 kg of sugar;
- 12 eggs;
- 70 g fresh yeast;
- a pinch of salt;
- 2 tablespoons of vodka;
- 1, 5 tablespoons of vegetable oil;
- 200 g of raisins.
Dissolve 250 g of sugar and yeast in warm milk and let them rise. Beat the eggs until frothy, add the remaining sugar to them. Then put softened margarine, vegetable, ghee and butter, sour cream, vodka into the mixture. Salt the mass and mix with the suitable yeast. Add pre-sifted flour and knead the dough. Leave the mixture in a warm place for several hours to come up.
Put the raisins in the dough, put it in the molds, filling them in a third of the volume. Leave in a warm place for another half hour for the mass to come up. After that, put in a heated oven to a temperature of 190 degrees and bake the cakes for about 1 hour.
To decorate the cake, use icing. Take 3 eggs and separate the whites from the yolks. Beat them with sugar until the mixture turns white. Decorate ready-made Easter cakes with icing, candied fruits and decorative sprinkles.
Kulich "Tsarsky"
To prepare this incredibly tasty Easter cake, you will need:
- 50 g of fresh yeast;
- 3 cups heavy cream;
- 6 glasses of flour;
- 200 g of butter;
- 1 cup of sugar;
- 15 yolks;
- chopped almonds;
- grated nutmeg;
- raisins;
- candied fruits.
Dissolve the yeast in 1 cup of warm cream. Pour in 3 cups of flour and a little sugar, mix everything very thoroughly and put the dough to rise in a warm place for several hours.
Mash butter with sugar, add yolks, remaining flour and cream. Combine the resulting mass with the dough, add nutmeg and almonds, chopped candied fruits and raisins. Knead the dough and leave it in a warm place for 2-3 hours. During this time, the mass should at least double.
Divide the dough into several pieces and fill the molds in half with them. Let it come up, and then put in a heated oven to a temperature of 190 degrees and bake the cakes for 40-60 minutes. Decorate ready-made cakes with icing, coconut flakes, candied fruits and confectionery sprinkles.
