Gozleme - traditional flat cakes made from thin unleavened dough, which are cooked in a special frying pan. The filling can be any, but the most popular option is a combination of cottage cheese, feta cheese and greens.

Ingredients:

  • 400 g wheat flour;
  • 150 g of coarse-grained cottage cheese;
  • 250 ml of filtered water;
  • 0.5 tsp salt;
  • 150 g soft cheese;
  • a bunch of fresh herbs (parsley and dill).

Sift flour into a bowl, set aside for sprinkling. Mix the main part with salt, add water in small portions, kneading a homogeneous dough. It should turn out to be soft and pliable, not sticking to your hands. If the dough is too thin, you can add more flour or put it in the refrigerator for a short time.

Prepare the filling. Mash cottage cheese with a fork together with feta cheese, add previously washed and dried greens, finely chopped or chopped in a blender. Mix everything well. There is no need to add salt; salted feta cheese will add richness to the filling.

Divide the dough into 4 parts, roll each into a thin layer on a board sprinkled with flour. Distribute the filling evenly in the center, tuck the edges, forming a neat rectangular bundle. Roll it with a rolling pin, making the cake flatter, turn it over and repeat the rolling. Make sure that the filling does not break through the dough.

Put the tortilla in a dry skillet, brush the top of the product with olive oil and turn over. Apply a layer of oil again, fry and turn over again. Repeat the procedure until an appetizing golden brown appears. Thin doughs cook very quickly, so it is important not to overexpose the baked goods on the fire. Serve ready-made tortillas hot, along with freshly brewed sweet tea.
