It is necessary

  • - flour - 800 g;
  • - eggs - 3 pcs.;
  • - sugar - 3 tbsp. spoons;
  • - sour cream - 400 g;
  • - yeast - 10 g;
  • - water - 80 g.
  • For the cream:
  • - milk - 2 glasses;
  • - sugar - 0.5 cups;
  • - eggs - 2 pcs.;
  • - flour –2 tbsp. spoons;
  • - vanilla sugar - 0.5 sachets.

Instructions

Step 1

Pour a bag of yeast into warm water and stir. We put in a warm place for about 10 minutes, until bubbles of foam appear on the surface.

Break the eggs into a deep bowl. Pour sugar into them. Beat with a mixer or whisk until foam forms. Then add sour cream and mix thoroughly. Combine the mixture with yeast. Then gradually add the sifted flour, stirring the mass with a whisk. When the dough becomes thick, knead it with your hands. Put the finished dough in a deep bowl, cover with a napkin and put in a warm place for 50-60 minutes. The dough should approximately double in volume.

To prepare the cream, pour the sugar into the milk and heat it a little in a saucepan with a thick bottom. Mix eggs and flour separately until smooth. Add half a glass of warmed milk to this mass, mix well again and send it to the pan with the rest of the milk. Heat over medium heat, stirring constantly. In no case do we boil. When the cream thickens and bubbles begin to appear on it, remove from heat. Add vanilla sugar and mix thoroughly. Let the cream cool at room temperature.

Step 4

Knead the dough that has come up and roll it out into a rectangular layer about 5 mm thick. Lay out a layer of cream on top, slightly stepping back from the edges of the layer. Wrap the dough in a roll, pinch the edge. Then cut into equal blocks of 3-5 cm. Put them on a baking sheet lined with parchment. Leave at room temperature for 10-20 minutes, so that the buns rise a little more. Lubricate with yolk. Then we put in an oven preheated to 190 degrees and bake for 20-30 minutes until browning.
