Pilaf with duck and dried fruits is an original recipe for an Uzbek dish with an unsurpassed taste and aroma. Sweet and sour dried fruits perfectly complement rice and duck meat in the dish.

It is necessary

  • - 1.5 kg of duck;
  • - 700 g of carrots;
  • - 400 g onions;
  • - 4 cups of rice;
  • - 70 g of dried apricots;
  • - 70 g of prunes;
  • - vegetable oil;
  • - 1 head of garlic;
  • - 1 tbsp. l. cumin;
  • - 2 tsp paprika;
  • - salt.

Instructions

Step 1

Take duck meat, rinse under warm water and trim off excess fat. Cut the duck into medium-sized portions. Heat the cauldron, pour vegetable oil into it, and then lay out the duck pieces. Fry until golden brown.

Step 2

Peel the onions and cut into half rings, cut the carrots into thin strips. Add vegetables to the cauldron with duck, fry until golden, then add cumin to the ingredients, pour the food with two glasses of water, simmer until half cooked.

Step 3

When all the water has evaporated, put the rice in a cauldron, smooth it over the entire surface. Make a depression in the middle and put the garlic in it, spread the prunes and dried apricots on top. Pour the contents of the cauldron with water so that the rice is covered by 1-2 centimeters. Cook the pilaf for 20 minutes. After the time has passed, let the dish steep, and then serve.
