Mussels are not only a direct source of protein, but in general, a very healthy seafood. There are many variations of its preparation. One of the most successful recipes is combined with tomato sauce.

Ingredients:

  • Fresh mussels - 700 g;
  • Tomatoes - 4 pcs;
  • Milk - 120 ml;
  • Chicken eggs - 120 g;
  • Lemon - 1 pc;
  • Butter - 60 g;
  • Salt;
  • Wheat flour - 20 g;
  • Granulated sugar - 20 g;
  • Breadcrumbs - 2 tablespoons;
  • Spices for seafood;

Preparation:

  1. Under running water, rinse the mussels well with a sponge, transfer to a saucepan, add cold water and heat a little.
  2. Immediately after the shells open slightly and the flesh becomes tender, the seafood must be taken out and laid out on a flat dish.
  3. Break chicken eggs, separate the yolk from the protein.
  4. Pour all the cold milk into a deep container, gently add the yolks to it, lightly beat the mixture with a whisk.
  5. Separate the mussel fillet from the shell, then lower it into the milk mass, then into flour and breadcrumbs.
  6. Melt half the butter in a preheated frying pan, fry the mussel meat in it until golden brown.
  7. Peel the garlic in advance, wash and finely chop. Squeeze all the juice out of the lemon.
  8. Combine the garlic and lemon juice, crush with a spoon, set aside to infuse.
  9. Rinse the tomatoes thoroughly, skip through a coarse grater, send to a preheated pan with the remaining butter. Cook the paste at a low temperature for about 10 minutes, remove from heat and cool completely.
  10. Season the tomato sauce with granulated sugar, special spices, salt, pepper and garlic dressing.
  11. Before serving, pour the mussels with tomato sauce, serve only cold.
