Mussels are not only a direct source of protein, but in general, a very healthy seafood. There are many variations of its preparation. One of the most successful recipes is combined with tomato sauce.
Ingredients:
- Fresh mussels - 700 g;
- Tomatoes - 4 pcs;
- Milk - 120 ml;
- Chicken eggs - 120 g;
- Lemon - 1 pc;
- Butter - 60 g;
- Salt;
- Wheat flour - 20 g;
- Granulated sugar - 20 g;
- Breadcrumbs - 2 tablespoons;
- Spices for seafood;
Preparation:
- Under running water, rinse the mussels well with a sponge, transfer to a saucepan, add cold water and heat a little.
- Immediately after the shells open slightly and the flesh becomes tender, the seafood must be taken out and laid out on a flat dish.
- Break chicken eggs, separate the yolk from the protein.
- Pour all the cold milk into a deep container, gently add the yolks to it, lightly beat the mixture with a whisk.
- Separate the mussel fillet from the shell, then lower it into the milk mass, then into flour and breadcrumbs.
- Melt half the butter in a preheated frying pan, fry the mussel meat in it until golden brown.
- Peel the garlic in advance, wash and finely chop. Squeeze all the juice out of the lemon.
- Combine the garlic and lemon juice, crush with a spoon, set aside to infuse.
- Rinse the tomatoes thoroughly, skip through a coarse grater, send to a preheated pan with the remaining butter. Cook the paste at a low temperature for about 10 minutes, remove from heat and cool completely.
- Season the tomato sauce with granulated sugar, special spices, salt, pepper and garlic dressing.
- Before serving, pour the mussels with tomato sauce, serve only cold.
