It is necessary

  • - 300 g of mussels in shells;
  • - 2 tablespoons of butter;
  • - 4 cloves of garlic;
  • - 2 tablespoons of flour;
  • - 0.5 lemons;
  • - 1 yolk;
  • - salt;
  • - freshly ground black pepper;
  • - parsley.

Instructions

Step 1

To cook mussels in garlic sauce, you will need raw clams in their shells. The easiest way is to buy frozen mussels. Make sure that the shells are not damaged - they will play an important role in serving the dish.

Step 2

Rinse the mussels thoroughly in running water. Put them in a saucepan, cover with cold water. Heat the shells over low heat until the flaps open and the meat is tender.

Step 3

Drain, but do not empty it - you will need the broth to make the sauce. Place the mussels on a platter and cool slightly. Carefully remove one sash from each sink. Spread the mussels with the remaining flap facing down. Keep food warm until serving.

Step 4

Prepare the sauce. Heat butter in a frying pan, add flour and stir fry until golden brown. Grind the peeled garlic in a mortar, put it over the fried flour and pour the mixture with a glass of the broth in which the mussels were cooked. While stirring, cook the sauce until thick. Knead the lumps thoroughly until the sauce is completely homogeneous.

Step 5

Squeeze the juice from half a lemon, finely chop the parsley. Remove the sauce pan from the heat and season the mixture with lemon juice. Whisk the yolk in a separate bowl and add to the sauce as well. Add salt and freshly ground black pepper and stir the mixture thoroughly.

Step 6

Pour mussels on a platter with hot sauce and sprinkle with parsley. The remaining branches can be used to decorate the dish. Serve the mussels in garlic sauce as a hot appetizer, accompanied by toasted white bread toast. The best drink for this dish is chilled dry white wine.
