A delicious, and most importantly lean salad with daikon can be prepared quickly at home. An unusual dish will add a special mood to your table.
It is necessary
- - 200 g oyster mushrooms, mushrooms or shimiji
- - 300 g daikon
- - 200 g radishes
- - 200 g fresh cucumbers
- - 1 tbsp. l. pickled ginger
- - 4 tbsp. l. toasted sesame seeds
- - 80 ml rice vinegar
- - 80 g sugar
- - 4 tbsp. l. vegetable oil
- - 2 tbsp. l. sesame oil
- - 1/2 lime
Instructions
Step 1
For dressing, mix the vinegar and sugar in a saucepan, put on medium heat and cook without stirring, 4-5 minutes, until the sugar is completely dissolved. Skim off any foam formed on the surface. When the sugar has dissipated, remove the saucepan from the heat and cool the syrup.
Step 2
Pour in vegetable and sesame oil, stirring constantly, add a pinch of salt and lime juice. Put it in the refrigerator. Clean the mushrooms from dirt, rinse and chop coarsely (cut off the hard legs of oyster mushrooms). Cook for 4-5 minutes in boiling salted water, then drain the water. Rinse the mushrooms in cold water and place in a deep bowl.
Step 3
Cut the daikon, radish and cucumber into thin slices or semicircles, put in a bowl with mushrooms.
Step 4
Add the ginger slices, dressing and stir. Sprinkle generously with sesame seeds and serve.
