Pea soup is a popular first course with dried peas as the main ingredient. In Germany, this soup began to be prepared with various types of smoked meats, and the recipe spread throughout the world.
Ingredients
- dry green peas - 1.5 cups;
- smoked sausage or any smoked meat - 300 grams;
- potatoes - 2 pieces;
- large onions - 1 piece;
- carrots - 1 piece;
- garlic - 2 cloves;
- salt, pepper, fresh herbs - to taste.
Step by step recipe
- First you need to read the instructions on the package with the purchased peas. Typically, it should be soaked in water overnight so it swells and is ready to cook, but some varieties do not require this. By the way, green peas can be replaced with a more budgetary version of legumes - yellow peas, they are not particularly different in taste, but the dish looks more impressive with a green one. Prepare the peas for the start of cooking according to the instructions on the bag.
- Drain all the water from the swollen peas, pour 3 liters of clean, cold water and put the pan on high heat. Bring to a boil, reduce heat and cook until peas are soft, about 40 minutes.
- During this time, you need to have time to prepare all the vegetables for the soup. Peel the potatoes and rinse them thoroughly, cut them into cubes and fill them with cold water for a while so that they do not darken. Peel the onion, wash and carefully cut into small cubes. Wash the carrots, peel them, and cut them in your favorite way: cubes, sticks or circles. If you know that someone in the family doesn't like whole carrot slices in soup, you can grate them or even remove them entirely from the soup. We also clean the cloves of garlic and wash them, three on a fine grater or pass through a garlic press. Cut the sausage into cubes or cubes.
- Then onions, carrots and garlic need to be sautéed to make their aroma more expressive. To do this, heat a few teaspoons of vegetable oil in a frying pan and put the onion cubes in it. After a few minutes, add the carrots and fry until the onions are transparent golden brown. At the very end, add chopped garlic and fry for about two minutes more.
- Drain all the water from the potatoes, add the cubes to the pea soup and cook for 15 minutes. Then transfer the browned vegetables from the pan and continue to cook for another 5-10 minutes. During this time, you need to fry the smoked sausage, you can in the same pan where the vegetables were prepared. Put the cubes in a hot skillet and fry over medium heat for 5 minutes. Then we transfer the sausage to the pan with other ingredients.
- Delicious pea soup with smoked sausage is almost ready, all that remains is to remove it from the heat, season with salt, pepper, ground paprika and other spices to taste. Serve hot with garlic croutons and fresh herbs. Bon Appetit!
