Kharcho is a classic Georgian cuisine recipe, which is prepared mainly from beef. Even translated from the Georgian language, kharcho just means no more and no less like "beef soup". Another characteristic feature of this dish is the huge amount of herbs and garlic.
It is necessary
- -500 g beef (shoulder or brisket)
- -0.5 Art. round grain rice
- -3 pcs. onions
- -1 tbsp tomato paste
- -3 tbsp adjiki
- - laurel leaf, peppercorns, salt, garlic
- -vegetable oil
- - cilantro greens, dill
Instructions
Step 1
Cut the beef into portions, wash and place in a saucepan, pouring two liters of cold water and cook for 40 minutes until the meat is half cooked, each time removing the resulting foam.
Step 2
Peel and chop the onion and send it to cook with the meat. Rinse the rice in several waters and add the boil to the meat as well. During this time, wash and chop the herbs.
Step 3
20 minutes after adding the onion to the dish, add half of all the herbs, adjika to the pan, salt and season with pepper. Heat the oil in a skillet and dissolve the tomato paste in it, then send it to the soup.
Step 4
Peel and chop the garlic, adding the rest of the herbs and bay leaf to the almost finished soup along with it. Cover the soup with a lid and simmer over low heat for 5 minutes. Pour the prepared soup into bowls and serve.
