Step 1
First of all, you need to defrost the duck if it is frozen, otherwise the meat will not be able to marinate properly. It is advisable to defrost the duck at room temperature.
Step 2
After defrosting, before rubbing the duck with spices or pouring it with liquid marinade, the duck must be dried with a paper towel.
Step 3
Then you need to choose a mixture for the marinade. The classic way in Europe is a mixture of spices and spirits. If you plan to cook a European dish, then it is better to grate the duck with salt, pepper, or Provencal spices, overlay with rosemary and pour over with sherry or cognac. Meat should be marinated for at least 8 hours, and preferably within a day.
Step 4
If you are planning a dish from Chinese cuisine, then it is better to use the following marinade. The basis of the marinade is soy sauce, to which a Chinese mixture of five spices is added - wuxianmian (ground Sichuan pepper, star anise, fennel, cinnamon and cloves in equal amounts), 2-3 teaspoons per bird.

The duck is carefully rubbed with this mixture and placed in a container or bag.
Step 6
Another variant of the marinade, similar to the Chinese, using oranges. The combination of citrus and meat is very unusual and delicious. Knead peeled and chopped garlic, onion, orange in one bowl. Then add rosemary, bay leaf, pepper and rosemary. Then the duck is coated with the resulting mixture and marinated in a cool place for 4-5 hours.
