Custard is a type of cream found in cooking. It can be used as a filling for tubes, cakes and other confectionery products, but it is most often used as a layer between the cakes in cakes. The great advantage of custard is that it is very easy and simple to prepare, and its cost is low.
It is necessary
- - 90 g of premium flour;
- - 400 g of sugar;
- - 750 g of milk with a fat content of 2.5%;
- - 5 chicken eggs;
- - 25 g of fresh butter;
- - 0.1 g vanillin.
Instructions
Step 1
First of all, boil the milk: take a saucepan, pour 750 ml of fresh milk into it and bring it to a boil over high heat.

Next, separate the yolks from the whites. Place the yolks in a separate deep bowl, add granulated sugar and vanillin to them and grind them well into a homogeneous snow-white mass (the mixture should increase significantly in size).
Step 3
Put the flour in a hot dry frying pan and heat it until it has a characteristic nutty smell. After that, transfer the flour to the yolks, mix everything well until smooth.
Step 4
Combine the yolk mixture with hot milk and simmer this mixture over low heat for 10-12 minutes. Remember to stir continuously to prevent the cream from burning.
Step 5
As soon as the cream has boiled down to the thickness you need, add butter to it and cool it quickly (it is best to use either cold water or ice). Beat the cream with a mixer. It is worth noting that this cream can also be cooked in the microwave, all cooking is done exactly as described above, only in this case it will be unnecessary to boil it, just place the saucepan with the cream in the microwave for 6-7 minutes and take it out every minute whisk it and the contents well.
Step 6
The custard is ready, now you can put it in a piping bag and decorate your baked goods. If you don't have a piping bag, either a regular plastic bag or parchment paper folded into a cone can replace it.
