Chicken meat is low in calories, but rich in proteins and is easily absorbed by the human body. Therefore, the more often it appears on your menu, the better. There are many tasty and healthy chicken dishes. Try it with peaches and ginger.

- 4 chicken breasts;
- 50 g of ginger root;
- 4 peaches;
- juice of one lemon;
- 2 tablespoons olive oil
- 2 teaspoons each of dill seeds and curry powder;
- 1 tablespoon of chopped cilantro and parsley;
- salt
- ground black pepper to taste;
- a handful of pistachios;
- 3 tablespoons of any vegetable oil for frying.
Instructions
Step 1
Peel the ginger root, separate a small piece and grate it on a fine grater, chop the rest into strips. Rinse the parsley and cilantro well under running cold water, dry and chop finely. Squeeze the juice of one lemon. Wash and skin the chicken breast, remove the fillet from the bones and cut into cubes. Grind two teaspoons of dill seeds in a mortar. Wash the peaches, remove the seeds, then cut the fruit into small slices.
Step 2
Prepare the marinade for the meat. To do this, mix two tablespoons of olive oil with lemon juice, chopped dill seeds, curry powder, salt and grated ginger root. Fold the chicken into a separate container, pour over the marinade, sprinkle with chopped cilantro and parsley and ground black pepper. Stir the mixture well, cover with plastic wrap or a lid and leave for one hour at room temperature.
Step 3
Heat the vegetable oil in a skillet, sauté the sliced ginger a little, and then transfer it to a separate plate. Place the marinated chicken fillet cubes in the remaining butter and fry for eight to ten minutes. After that, add the peach slices to the chicken in the pan and, stirring occasionally, simmer all together for another five minutes over medium heat.
Step 4
Peel the pistachios, chop finely. Place the chicken and peaches on a large plate or platter, sprinkle with toasted ginger and pistachios on top. As a side dish for such a dish, you can serve grilled vegetables: zucchini, tomatoes, eggplant.
