Until recently, in the Soviet Union, sprats were considered a delicacy and were served on the table only for the holidays. To date, these canned foods do not surprise anyone. But many housewives from previous years still have delicious, and most importantly, inexpensive recipes for various dishes from sprat. And those who wish for these dishes are always found at any feast.
Snack
Sandwiches with sprats, which are very easy to prepare, are perfect as a simple cold snack or an accompaniment to beer. A bachelor man, whose kitchen repertoire is limited to dumplings and sausages, can also cook them. You need to take half a sliced loaf, cut into slices two centimeters thick, fry in a preheated pan with vegetable or melted butter on both sides, until a golden crust appears on the bread. Then grate the garlic on a fine grater and mix with mayonnaise. Brush hot pieces of loaf with it. On top of each piece, put a couple of sprats on the garlic mayonnaise. On top is a circle of red pepper or tomato. If it's not the season for fresh vegetables, then cut the pickled cucumber into slices. Sprinkle the sandwich with finely grated hard cheese. Put the sandwiches on a baking sheet and place in a preheated oven for a few minutes until the cheese is melted. This appetizer is very tasty hot.
Salad
The traditional sprat salad, which served as a decoration on the New Year's table a couple of decades ago, is made on the basis of rice. Boil one glass of long grain rice in salted water, cool. Cut two or three eggs, the same amount of fresh or pickled cucumbers. Remove the smoked sprats from the jar, chop with a fork. Mix eggs, cucumbers and sprats with rice, season with mayonnaise, salt to taste. If desired, on a flat dish, shape the salad into a hemisphere, apply another thin even layer of mayonnaise on top and cover with green peas from a jar.
Hot
It is quite possible to use sprats as a second course. Try potato patties. You will need four potatoes per serving for two: boil, peel, salt, then combine with a cup of warm milk and a slice of butter and make mashed potatoes. Mash the sprats with a fork. Make balls from the cooled puree with your hands, shape the cutlets, put the sprat mass in the middle. Close the slides so that the sprats are not visible. Then lightly fry the zrazy on both sides in vegetable oil heated in a pan.
