Champignons are tasty, inexpensive and available all year round mushrooms that are easy to prepare and go with almost any dish. In addition, they are very healthy and are equally great when raw, pickled, fried, and stewed.
Why champignons?
Champignon came to Russia from France. The first selected mushrooms of this type were grown in Versailles by King Louis XIV, famous for his culinary preferences. First, the mushrooms were grown in the open air, and then in closed and dark rooms. Champignon is good for its taste and at the same time is extremely unpretentious, when grown, it does not require any special care.
Champignons are absolutely safe mushrooms, they are easily digested, therefore they are ideal for dietary nutrition. They contain a large amount of mineral salts and vitamins necessary for the body, while the product has a low calorie content. It is never poisonous and does not contain any toxins. In addition, champignons go well with almost all dishes.

How to cook
Champignons can be eaten raw. 300 grams of fresh mushrooms should be peeled, then the legs should be cut off. Cut the caps into wedges, chop two cloves of garlic, add it to the caps, then mix with three tablespoons of mayonnaise. Serve the resulting salad with meat, pre-salt and sprinkle with finely chopped parsley.
You can also make "quick" sandwiches from raw mushrooms. A thin layer of butter or mayonnaise is spread on a loaf of white bread, hats cut into thin slices and previously peeled from the skin are placed on top, which are then sprinkled with ground pepper, salt and chopped herbs.
If you pour 300 grams of finely chopped, peeled and washed mushrooms with the juice of one lemon, and then add a couple of chopped cucumbers and five tomatoes, you get an excellent vitamin salad. It should be seasoned with sunflower oil and French mustard.
A delicious salad can also be made from pickled champignons. 300 grams of mushrooms are cut into strips, one onion is finely chopped and sautéed in vegetable oil until golden brown. Boil 2 chicken eggs and a couple of medium-sized potatoes, cut them into cubes. Mix mushrooms, onions, eggs, potatoes and a couple of chopped pickles. The salad is dressed with mayonnaise and served with herbs.
Stewed champignons are very good with chicken. Onions are stewed with mushrooms in vegetable oil, then the chicken cut into pieces is placed in a saucepan along with the resulting mixture and stewed under a closed lid for about an hour.
Champignons are versatile mushrooms that can be served with any side dish or even used instead of a side dish. If you wish and have a culinary imagination, you can invent an immense number of dishes with the participation of these mushrooms in a wide variety of combinations.
