  • - 5 tablespoons of olive oil;
  • - 2 skinless and boneless chicken breasts, cut into cubes;
  • - salt and pepper to taste;
  • - garlic powder to taste;
  • 1/2 cup low sodium chicken broth
  • - 1 bunch of thin asparagus, cut diagonally into 2 cm pieces;
  • - 1 minced garlic clove;
  • 1/4 cup Parmesan cheese

Step 1

Take a saucepan and pour water into it, salt, add a little vegetable oil and bring to a boil. When the water boils, place the penne pasta in the water and cook until tender, which will take about 10 minutes. Drain the water.

Take a saucepan with a thick bottom, pour 2-3 tbsp. tablespoons of olive oil for frying, heat over medium heat. Place the diced chicken breast in a skillet and fry until tender, when the chicken is almost cooked, season with salt, pepper and garlic (powder or fresh). The breast is ready when it acquires a beautiful golden uniform crust, it takes about 5-8 minutes. When the chicken breasts are ready, place paper towels on a plate and place the fried chicken on top of them to absorb the excess oil.

Then you need to take a frying pan with high sides, pour chicken broth into it. After that, take the washed asparagus, add it to the broth, also add the garlic cloves, a little garlic powder, salt and pepper. Cover and simmer over medium heat for about 8 minutes, everything is done when the asparagus is soft and tender.

Add ready-made, fried chicken to the asparagus, stew for 10 minutes. When the dish is ready, you can start serving. Put the pasta in a plate and season everything with chicken and asparagus, you can add broth if you wish. If the dish is without broth, garnish with some herbs and finely grated cheese.
