Instructions

Step 1

Rinse 900 grams of chicken fillet, pat dry with a towel, cut into small pieces.

Pour 3 tablespoons of sesame oil into a thick skillet and heat over medium heat. Put the chopped fillet in small portions in a skillet with butter and simmer over medium heat for about 20 minutes, stirring occasionally, carefully removing the finished meat with a spoon or slotted spoon and adding a new portion. To drain off the fat, place the stew in a colander in the saucepan. If necessary, add oil to the fillets during the stewing process.

Set aside the cooked meat for a while.

Step 2

Wash 6 ginger roots, carefully peel the skin. Peel it off gently and with a thin layer, since the main supply of oil and aromatic substances is located near the skin. Cut the ginger into small pieces. Place them in a skillet with sesame oil. Pour in half a glass of semi-dry sherry, salt to taste. Simmer over medium heat. When the mixture boils, reduce the heat and keep it boiling slightly, stirring with a spoon (preferably a wooden one). After 15 minutes, pour one and a half cups of warm water into the boiling mixture and add 1 teaspoon of sugar. Add heat again, bring to a boil. Then turn the power down to the lowest power, but to continue boiling. In this state, simmer the ginger for about half an hour.

While the ginger is stewing, wash the asparagus thoroughly, dry it with a towel, cut off the hard woody ends with a sharp knife and cut into pieces of 2-3 centimeters.

Rinse 200 grams of fresh champignons, peel and cut into slices.

Step 5

Add mushrooms and asparagus to broth and cook over medium heat for another 15 minutes. Pour the finished soup into a tureen or pour into bowls. Serve hot immediately. Place the chicken stew in bowls and serve separately.
