Fish stuffed with minced meat is a rather unusual combination of products that came to us from England itself. It is there that such dishes are considered classics of the culinary genre. To taste and appreciate fish with minced meat, you first need to cook it. Therefore, we suggest that you use this simple and convenient recipe.

Ingredients:

  • 2 dorado fish;
  • 20 strips of bacon (approximate weight 150 g);
  • 2 branches of sage;
  • 2 branches of thyme;
  • 15 olives;
  • 4 cloves of garlic;
  • 1 lemon;
  • 2 tbsp. l. olive oil.

Ingredients for the filling:

  • 200 g raw sausages;
  • ½ bunch of fresh parsley;
  • 1 pinch of cayenne pepper
  • 1 tbsp. l. lemon juice.

Preparation:

  1. Clean both fish carcasses of scales, gut and wash thoroughly both outside and inside.
  2. Wash the parsley, shake off the water and chop finely with a knife.
  3. Carefully cut the raw sausages with a knife.
  4. Squeeze the minced sausages into a bowl.
  5. Add a couple of drops of lemon juice to the minced meat, add cayenne pepper and chopped parsley. Mix everything thoroughly until smooth. Note that it is not recommended to pepper and salt the finished minced meat, since sausage manufacturers usually season them very well with spices.
  6. Divide the prepared minced meat into two equal parts.
  7. Lightly salt the peeled fish both inside and outside. Put one piece of minced meat in the belly of each dorado.
  8. Cut the bacon into thin strips to make 20 strips. Each fish will take 10 strips.
  9. So, put the first ten strips of bacon on the plank in a V-shaped pattern. Place the stuffed dorado on the bacon so that its tail is at the junction of the strips. Swaddle the carcass with strips of bacon, overlapping them. Repeat the same wrapping procedure with the second dorado.
  10. Cut the garlic into cloves and peel. Wash the lemon and cut into slices.
  11. Put the wrapped fish on a baking sheet with chives, olives, lemon slices, sage and thyme. Sprinkle everything with oil and send to the oven for a quarter of an hour, preheated to 200-220 degrees.
  12. After this time, remove the baking sheet from the oven, turn the fish over to the other side and send it back to the oven for a quarter of an hour.
  13. Serve the prepared stuffed dorado with or without garnish.
