Spicy mushrooms with spinach is an Indian dish that anyone can easily cook!
It is necessary
- - 3 tbsp. l. vegetable oil
- - 2 finely chopped onions
- - 3 garlic cloves, crushed
- - 2 tsp grated ginger root
- - 1/2 tsp. turmeric
- - 1/2 tsp. paprika
- - 2-3 tsp spices garam masala
- - salt
- - 350 g spinach leaves
- - 450 g champignons
- - 3-4 ripe tomatoes, chopped (peel and seed)
- - 1-2 tsp cumin seeds
- - tortillas and cucumber raita for serving
Instructions
Step 1
Heat the oil in a skillet and fry the onions for 2 minutes. Add garlic and ginger, cook for 1 to 2 minutes, until onion is golden brown. Add turmeric, paprika, 1-2 teaspoons of garam masala and some salt. Cook for 1 minute.
Step 2
Add spinach, mushrooms and tomatoes, stir, reduce heat to low. Simmer for 20-30 minutes, stirring occasionally, until the liquid has boiled down and the stew becomes thick.
Step 3
Fry the cumin in a dry skillet until golden brown. Sprinkle the remaining garam masala and cumin on the stew. Serve with tortillas and cucumber raita.
