Chorba is a popular traditional thick soup that is equally loved in Moldova, Turkey, Albania, Serbia, and the Balkans. There are many different recipes with meat and fish, but the simplest and most favorite in Bulgaria is the chorba made from green young green beans.

400 g of green beans, 30 ml of vegetable and butter each, 200 g of onions, 200 g of tomatoes, greens, red ground pepper, 1 tbsp. a spoonful of flour, 100 gr of walnuts

Step 1
The suggested recipe contains no meat ingredients, but that doesn't make it any less satisfying. The first step is to boil green beans until half cooked. It is removed from the broth, but the liquid remains after cooking. She will be the basis of the soup - chorba. You need butter to fry the beans in a skillet. After frying, it sinks back into the broth.
Step 2
Onions are finely chopped and also sautéed, but in vegetable oil. Chopped green onions are added to it. It is customary in Bulgaria to fry green onions. After the onion is cooked, flour is added, since a real chorba usually looks like a puree soup. A thick onion-powdery mixture is also sent to a saucepan with vegetable broth. Everything is thoroughly mixed.
Step 3
Chorba can be cooked without tomatoes, but if they are supposed to be, then they are finely chopped and sent to the broth for cooking. You do not need to fry them. The finishing touch to this dish is spices (red hot peppers, garlic), herbs (dill, parsley) and chopped walnuts. Nuts can be added at the end, or sauteed in butter along with the beans.
